Can I choose not to show the translated text until I have translated the whole website?

Yes you can. Just don’t add a language selector and it will always show your default language. Also, in the script that you paste into your website, if you delete the ML languages part in the script, as highlighted red below, and just keep your first language in there and it will only show the one language, no matter the browser settings.
